Conch fritters are a favorite Island appetizer served a dipping sauce (mix mayonnaise, catsup, hot sauce and lime) and with an ice cold Kalik beer.

 
2 conch                                  
1 onion                                  
1 green pepper                      
1 clove garlic              
2 T. Lime juice                            

Hot Peppers               
1 cup Flour
2 tsp. baking powder
1 tsp. dried thyme leaf
2 eggs
2 T. tomato paste
1/4 cup milk or beer

Grind conch, onion, green pepper, garlic, lime and hot peppers in a food processor, then mix in other ingredients. The batter should be fairly thick. Heat about 2 inches of cooking oil in a large pot. Drop batter by teaspoonfuls into oil and fry quickly until golden brown. Drain.
