  • I like to make this when I need to use up my overly ripe bananas. It's quick and easy! No cranberries? You can also use
    chocolate chips and/or nuts instead of cranberries. Leave out the optional ingredients to make plain banana bread.

  • 3 bananas , mashed
  • 1 cup sugar
  • 2 eggs
  • 1 ½ cups flour
  • 1 teaspoon baking soda
  • ¼ cup vegetable oil or melted butter
  • 1/2 cup dried cranberries (optional)
  • 1 tsp vanilla (optional)
  • Lemon or orange zest (optional)

  • Mix ingredients in the order listed above. Just use the same fork you used to mash the bananas. Pour into a silicone loaf pan. If you dont have a silicone loaf pan be sure to grease and flour your pan.  Bake in a moderate oven (350°) for 45-60 minutes. Makes one loaf.
