Whole Wheat pastry flour cookies with Canola oil PDF Print E-mail

Dry Ingredients:

2 tablespoons baking powder
1/2 teaspoon Kosher salt
2-1/2 cups whole wheat pastry flour
1/2 cup granulated sugar


Wet Ingredients:

2 large eggs
1/3 cup honey
2 tablespoons vanilla
1/3 cup Canola oil

Additional Ingredients:

1/2 cup walnuts or other nuts
1/2 cup chocolate chips.

Preheat oven to 350 degrees Fahrenheit.  Wipe a thin layer of Canola oil onto a baking sheet.


Combine dry and wet ingredients separately, then combine together, using your hands if necessary.  Add the additional ingredients.

Make cookies by hand one of two ways:  either shape like donut holes or shape of thin round store bought cookies.  Place on cookie sheet.

Cookies shaped like donut holes took 19 minutes in my oven.  The ones shaped like thin round store bought cookies took 13 minutes.

Because these cookies are not made with butter, they will not spread out when they cook.  They will be the shape you form them in and the same size when baking is complete.  The baking powder will make them puff up a little, but no much.

These cookies are just barely sweet.  My husband likes them this way.  I have considered melting chocolate chips or semi sweet baking chocolate and drizzling this over the cookies, but he says no.
