The recipe calls for real key limes but I have made it with regular limes and it works just fine. Add a dollop of whipped cream for a special treat.


NOTE: A friend from Florida recently told me that for it to be authentic, you have to use Nellie & Joe's real key lime juice


One 9" graham cracker pie shell

One 14 oz. can low fat sweetened condensed milk

4 egg yolks

1/2 cup fresh squeezed key lime juice


Combine milk and eggs. Slowly add juice, mix thoroughly until smooth. Refrigerate overnight. Top with whipped cream or meringue.

If you do not have a refrigerator on board, bake at 350°F degrees for 15 minutes. Let stand in a cool place for a few hours.
