Sauteed Chicken with Garlic, Tomatoes and Basil



4 Thin Chicken Breasts

2 Cloves Garlic

6 Medium Tomatoes or 1 Pint Cherry Tomatoes

20 Fresh Basil Leaves

1/4 Cup Olive Oil

1/2 lb Ziti (or other pasta of choice)

1 Teaspoon Salt

With tomatoes and basil being in season in so many areas at the moment, the ingredients for this recipe are abundant at many farmer's markets right now. To prepare, put enough olive oil in saute pan to lightly coat pan (or spray with cooking spray), mince garlic and add to pan. Add chicken and saute with garlic over medium high heat for 7-10 minutes. Turn chicken over and add sliced tomatoes, basil, salt and drizzle olive oil. Cover, reduce heat to medium low and let simmer for 10-15 minutes or until chicken is cooked through. Cook pasta per package directions while chicken is simmering. Plate pasta and top with a piece of chicken with an additional spoonful of sauce from the saute pan.
