Enchilada Casserole PDF Print E-mail

1/2 pound ground beef
1/2 cup chopped onion
2 cloves minced garlic
8 oz salsa
1/2 can refried beans

1 can enchilada sauce
6  - 7 oz crushed tortilla chips
1 1/2 cup shredded cheese

Cook beef with onion and garlic. stir in salsa, beans, sauce and simmer 5 minutes. Layer half meat mixture in baking dish, cover with half the chips and half the cheese.  Repeat layers.

Bake 350 for 25 min.

Hint, I place this in a square cake pan and grill on low heat for 15 minutes.  To prevent burning the bottom nest 2 pans together for insulation.
