Creole Red Beans and Pasta PDF Print E-mail

3/4 cup chicken broth
1 1/2 cups chopped onion
1 medium green pepper chopped
1 cup chopped celery
2 tsp minced garlic
1 tsp dried oregano
1/4 tsp salt
2 bay leaves
3/4 tsp dried thyme
3/4 tsp dried basil
1/2 tsp paprika
1/2 tsp pepper
1/8 tsp cayenne pepper
28 oz can crushed tomatoes
1 tsp sugar
16 oz can red kidney beans drained and rinsed
1/2 pound dried pasta, cooked

Warm broth in large kettle over med heat.  Add onion, peppers and celery, stirring constantly for 1 minute. Add garlic and seasonings, cook for 5 minutes. Add tomatoes and sugar, simmer 15 minutes. Add red beans and cook 5 minutes more. Add additional broth if needed. Remove bay leaves.

Mix with pasta and serve. Serves 4.
