1Tbs oil
1 Chopped Onion
2 Cloves Diced Garlic
1 Can Diced Tomatoes
1 ¼ cup Vegetable Stock
1 cup Red Lentils
1 ¼ cup White Wine
1 tsp Thyme
½ tsp Ground Cumin
3 Tbs Soy Sauce
½ Hot Chile Seeded/diced
1 tsp Pumpkin Pie Spice 1 can Kidney Beans
2 tsp Sugar
Cooked White Rice with Corn
Heat oil in pan, add onion and garlic. Cook for 2 min and add tomato, veg stock and lentils. Cook for 15 min. Add wine and seasoning and cook for 10 min. Add Kidney beans and sugar and heat a few more minutes. Serve over rice/corn mixture |
