1 pound ground beef or turkey
1 cup chopped onion
2 cans (14 oz) diced tomatoes
1 cup enchilada sauce
1 to 2 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
12 6" tortillas (flour or corn)
8 oz cream cheese, softened
1 can (4 oz) green chilies
1 cup shredded cheese
Cook meat and onion, drain well. Stir in tomatoes, enchilada sauce and seasonings. Simmer for 5 minutes. Pour half mixture into 13x9x2 pan. Set aside.
Spread cream cheese on warm tortillas and top with chilies. Fold tortillas in half. Arrange tortillas over meat mixture and pour remaining sauce over top.
Cover and bake 350 degrees for 15 minutes. Sprinkle with cheese and bake until melted.
