8 6" corn tortillas
1 15 oz can black beans (rinsed)
2 10 oz cans enchilada sauce
8 oz cheddar cheese, shredded
2 Tbs chopped canned Chipotle in Adobo
Combine 1/2 cup enchilada sauce, 1 cup cheese, beans & chipotle pepper.
Spritz tortillas with oil and warm on griddle, one at a time. Place 1/4 cup bean mixture onto tortilla and roll, placing seam side down in 8/11 pan. Spoon remaining sauce over top.
Bake 20 min at 350 degrees. Uncover and add remaining cheese. Bake until cheese melts.
