1 tbs vegetable oil
1/2 cup finely diced onion
3 green onions, white and light green parts, thinly sliced
1 tsp minced jalapeno, seeds removed if desired
coarse salt and freshly ground pepper
1/2 tsp good quality chili powder (such as ancho powder)
1/2 pound rock shrimp (or peeled and deveined medium shrimp)
4 ounces cream cheese, room temp.
3/4 cup grated Monterrey jack or white cheddar
1/2 pound crab meat, picked over
1/2 cup fresh corn kernels (optional)
1/4 cup diced red pepper (optional)
10 medium flour tortillas
1 cup good quality enchilada sauce
2 tbs sour cream
