Lightly muddle mint leaves and lime in a tall glass. Cover with simple syrup or sugar and fill glass with ice. Add rum and club soda; stir well. Garnish glass with lime wedge and springs of mint. Making simple syrup: 2 parts sugar to 3 parts water. Mix sugar well with hot water until dissolved. Stores well in a closed container for several weeks. Source: SaltySailors |
