Crab-Artichoke Melt PDF Print E-mail

2 cups Freshly-grated Parmesan

1 – ½   Cups Mayonnaise

1 medium onion, chopped

12 oz.  Crab meat

1 can artichokes in water

 ½ Cup Chopped Parsley

8 slices sourdough bread (English muffin halves work very well also)

8 plum tomatoes sliced

8 oz. Monterey Jack – sliced thin

 

Drain and chop artichokes. Mix first six ingredients in a large bowl. Place mixture in a glass baking dish. (Note: can be prepared up to 8 hours ahead and chilled.)  Preheat oven to 400 degrees. Bake mixture until bubbling and heated through (about 25 minutes). Remove from oven.  Place bread on a baking sheet. Divide hot crab mixture among bread slices (use generous ½ cup each). Top with tomato slices and cheese slices.  Bake or broil until cheese melts.
