2 Cups White Vinegar 2 Cups Sugar 2 Cups Water 2 Tablespoons Pickling Spice
2 Pickling Cucumbers 2 Medium Carrots 1 Small Spanish Onion
Peel and coarse grate the carrots. Thinly slice the cucumbers. I use a mandolin on a 30 degree angle. Finely chop the onion. In a Gallon size freezer bag mix the vinegar, water, spice and sugar. Dump in the veggies, Squeeze out the air and marinate for 6 hours minimum.
Drain off the marinade prior to serving and garnish with fresh chopped cilantro or parsley. Serves 4. |
