Granny Sloan’s Hush Puppies / Seafood Batter (MIX) PDF Print E-mail

1 1/2 cup cornmeal either color (I prefer a mix of both)
1/2 cup all purpose flour
1 tablespoon baking powder
1/4 tablespoon baking soda
1 1/2 tablespoon dehydrated onion flakes
1/4 cup reconstituted dry cultured buttermilk

1 tablespoon salt
1 teaspoon cayenne pepper (if desired)
1 pinch of finely chopped dry dill

Mix as many portions (2 cups) as desired and store in a cool dry place, will store for six months.

To use:

Add water to mixture until a bit thinner than desired, let stand for 20 minutes to allow onion flakes to reconstitute. The mixture will thicken.


Hush Puppies:


Add 1 egg and 2 tablespoons of sugar in the batter mix.

Using a small cast iron frying pan add about 1 inch of canola oil. Heat to moderate temperature about 350F. Mold mixture on a tablespoon and spoon into hot oil pan, until they float and are a golden brown.  (Hint: Keep a cup of water handy to clean the spoon between molding/dropping)

For a more crunchy effect cook until dark brown.


Seafood Batter


Coat seafood portions by dredging fish, clams, or oysters in an egg wash, then roll in hush puppy batter mix.  Fry until golden brown.
