1 1/2 cup cornmeal either color (I prefer a mix of both) 1 tablespoon salt Mix as many portions (2 cups) as desired and store in a cool dry place, will store for six months. To use: Add water to mixture until a bit thinner than desired, let stand for 20 minutes to allow onion flakes to reconstitute. The mixture will thicken.
Using a small cast iron frying pan add about 1 inch of canola oil. Heat to moderate temperature about 350F. Mold mixture on a tablespoon and spoon into hot oil pan, until they float and are a golden brown. (Hint: Keep a cup of water handy to clean the spoon between molding/dropping) For a more crunchy effect cook until dark brown.
