Cauliflower with Cheese Topping

Cook whole head of cauliflower in boiling water until done but still firm. Mix ½ cup mayonnaise and some yellow mustard to make a quick Hollandaise Ssauce. Put cooked cauliflower in ovenproof pan. Coat with hollandaise sauce and then grated cheese. Put in oven until cheese is melted. Sprinkle with paprika for color and serve cut into wedges.
