Fabulous No-Knead Bread

(makes one pan loaf)

¼ cup warm water

1.5 packages dry yeast

1/8 cup bread flour

½ tb white sugar

Place in mixing bowl of electric mixer or in bread maker or simply in a bowl. Leave for 5 minutes. It should bubble almost immediately.

Other Ingredients

1 cup cooking oats

1 cup whole wheat flour

2 & 1/4 cups warm water

¾ tb salt

1/3 cup brown sugar

1/3 cup vegetable oil

5 cups bread flour

Note: If I have the time I do knead the bread as I feel it makes a better loaf but you don’t have to. I also use a combination of flours – rye, wholemeal and a little white. Use some gluten, say 2 tablespoons if using rye flour.

Place oats, water, whole wheat flour, salt, sugar & oil into the

yeast mixture. Leave for 5 minutes. Begin adding bread flour one half cup at a time until dough pulls away from side of bowl. Place dough in an oil bowl and turn to coat the whole surface. Cover with a damp tea towel & let rise in a warm spot for one hour or until doubled in size.

You can then knead or simply shape the dough & put it in a loaf pan

Let dough rise until 1 inch over pan, about 30 minutes.

Bake at 350 degrees for 35 minutes until brown.
