Rusk’s

(To dunk in coffee)

No South African household is without a supply of Rusk’s!! It's just dried out cake/bread, so doesn't go mouldy, doesn't weigh much, teething babies LOVE chewing on them. Comes from the time of the Great Trek.

10 C Self-Rising flour (Or Use: 10 C Flour + 1 1/2 Tbl Baking Powder + 2 tsp Cream of Tartar + 2 tsp Baking Soda + 1 tsp Salt)

1 C Brown sugar

1 Tbl Anise seed

400g Butter (Approx 14 Oz or .88 Lb)

2 C Buttermilk

Put all the dry ingredients in a mixing bowl, rub in the butter, add buttermilk, and mix well. Bake in greased pan @ 425F for 25-30 mins. Allow to cool slightly, cut into squares, place on oven rack, allowing to dry overnight in cool oven. Keep Rusk’s in an airtight container.
