| Carrot and Sweet Potato pressure cooker soup |

Modified From the Moosewood Lodge original recipe for carrot soup: one pound fresh carrots well scrubbed and chopped one large sweet potato peeled and chopped 4 cups water 1-1/2 teaspoons coarse grained sea salt or any salt you like 3 tablespoons unsalted butter 1 cup chopped red onion 1/3 cup cashews or almonds or possibly any favorite nut 3 cloves fresh garlic chopped 1 cup whipping cream 1/8 nutmeg grated fresh or about 1/2 teaspoon - to taste 1 teaspoon dried ginger 1 teaspoon thyme 1 teaspoon basil a few shakes of cinnamon place carrots, sweet potato, and water into a pressure cooker on a gas stove on high and till the steam pressure builds up. Then lower heat and cook for 5 minutes more. Turn off heat. Release steam and leave food in pot, lid remaining locked for about 30 minutes - till mostly cooled. Remove the lid. sauté the onions, garlic, nuts and butter until the onions are transparent. Combine with the spices, carrots, sweet potatoes, and water in the pressure cooker. With a hand held electric puree appliance, puree this mixture. Reheat till steaming hot. Remove from heat. Stir in the whipping cream. Serve immediately.
