INGREDIENTS:

2 eggs per person (made from dried egg powder)

1 tablespoon butter or margarine (Fat-Free Powder Butter Replacement) or olive oil

2 whole wheat, whole grain, or flour tortilla per person.

½ teaspoon dried basil

¼ teaspoon dried oregano

¼ cup dried Jalapeño pepper (soaked to moistness)

Dash of salt and pepper to taste.

2 slices of precooked bacon per burrito.

¼ cup shredded cheese of your choice, mozzarella, cheddar, or a Mexican blend

 

 

METHOD:

Preheat oven to 350 degrees*

Melt butter/oil in a small cast iron skillet over low heat.

Beat eggs; add basil, oregano, and a dash of salt and pepper.

Cook mixture in pan until done. (scrambled eggs)

Place two strips of bacon on each tortilla

Divide cooked egg mixture, and put serving amt on top of bacon.

Sprinkle each portion with cheese, and roll up.

Place prepared Burritos in baking pan, cover with tin foil, and place in oven. Heat for approximately5 minutes or until cheese is melted.

 

Serve immediately. Have a glass of juice, or cup of fruit with dish.
