Norwegian Cinnamon Buns

 

Preheat oven 450F Bake 20-25 min Makes 20 rolls

Prepare 13x10 roasting pan lined with wax paper

Dough

4 C Flour

1/3 C Sugar

½ tsp Salt

3 Tbl Rapid or Fresh Yeast

½ C Butter-Melted

1 2/3 C Milk

2 Eggs

Filling

½ C + 2 Tbl Soft Butter

½ C + 2 Tbl Sugar

1 ½ tsp Cinnamon

Glaze

1 Egg-Beaten

Whisk flour, sugar, salt & yeast, set aside. Whisk butter, milk, & 2 eggs. Stir the butter and flour mixtures together. Knead until smooth and springy. Form into ball, place in oiled bowl. Cover with plastic wrap and let rise for 25 min. Use 1/3 dough and stretch to fit pan. Roll the rest of the dough on lightly floured surface to approx 20x10”. Mix filling and spread onto dough. Roll and cut into ¾” slices (Approximately 20 slices) Cover dough in pan with slices. Brush with egg glaze. Let rise 15 min. Bake.

Remove from pan and cool on wire rack. Cut or tear off to eat.
