When you just need to crunch but the lettuce is long gone and the cabbage is all that's left in the bottom drawer of the fridge, this snappy salad can cheer you up! Go to www.captainchrisyachtservices.com and click on galley recipes for more EASY meals aboard.

1/2 head cabbage

1 can water chestnuts
1/2 green pepper finely chopped
1/3 cup vinegar
2 tbsp olive oil
3 tbsp sugar
1/2 tsp salt
1 package uncooked raman noodles

In a bowl, combine shredded cabbage, water chestnuts and green pepper, in a seperate bowl stir together vinegar, sugar and salt (you can use artificial sweetner) until all dissolved then add oil. Pour vinegar solution over cabbage, tossing to coat. Just before serving smack the bag of noodles to break up in to small pieces then sprinkle hard crushed noodles over salad. Toss again and C-R-U-N-C-H to your heart's content.
