Chicken Paprikash with Rice PDF Print E-mail

6 pieces chicken legs and thighs
1 large cooking onion, chopped
1 tomatoe, chopped 
1 cup rice (we use brown rice but white will do too)
6 cloves garlic
2 TBSP paprika
1 tsp tumeric
1 TBSP olive oil

1. Rinse rice well, drain and set aside. 
2. In a large pot saute onions in olive oil over medium heat for 2 minutes. Add spices and saute for 1 more minute stirring well.
3. Add chicken pieces a little at a time and brown slightly. Remove browned chicken to a plate to add next round of meat until all chicken is browned. (kitchen tongs do a good job.) Return all the chicken to the pot, layering it over the onions.
4. Chop the garlic cloves and sprinkle them over the chicken pieces. 
5. Add two cups of water and the chopped tomato. Close lid. Bring pot to a boil and turn heat down to low. Simmer gently for 45 minutes to 1 hour or until chicken is done (test with a fork).
6. Turn off heat and let pot sit for 5 minutes with lid closed.

Serves 6 - or 4 really hungry crew.  Smile
