Easy Jambalaya PDF Print E-mail

8 oz breakfast sausage
2 cups minute rice
2 cups water
16 oz stewed tomatoes
12 oz raw shrimp (can substitute chicken)
1/4 cup diced onion
1/2 cup chopped green pepper
2 bullion cubes
1 tsp salt
1/4 tsp each: thyme, chilie pepper and crushed red pepper
Brown sausages and cut into chunks. Add remaining ingredients and simmer uncovered for 10 minutes.
Hint, This recipe calls for brown and serve sausages that are hard to find in the islands. I buy local breakfast sausage and cook them up and slice before freezing.
