  • This is one of  my favorite stews and it smells delicious! Some recipes call for complicated steps of tossing meat in spices and browning things separately but that is really not necessary. One pot simple goodness! Serve over egg noodles, potatoes or by itself.

  • Vegetable oil for browning
  • 1-2 onions, sliced
  • 1-2 bell peppers, slices
  • 3-5 tablespoons Hungarian sweet paprika (regular paprika will do)
  • Chili powder to taste
  • Salt to taste
  • Ground black pepper to taste
  • 1-2 pounds beef stew meat, cut into 1 inch cubes
  • 1 (6 ounce) can tomato paste
  • 1 (14 ounce) can stewed tomatoes

Heat oil in a large pot or Dutch oven over medium heat. Brown meat in oil until stirring frequently. Add onions and bell pepper and cook until soft.
Add spices. Pour in tomato paste and stewed tomatoes. Reduce heat to low, cover and simmer, stirring occasionally, 1 1/2 to 2 hours, or until meat is tender.
Serve over egg noodles, potatoes or enjoy by itself. You can also add broth if you want to stretch it for more people or make it more soup-like.
