Many items can be safely stored without refrigeration if you take care. Even mayonnaise can safely be stored without refrigeration. You need to be nearly fanatical about cleanliness though. Only use clean instrument to get mayo out of the jar. Close the lid as soon as you are done to keep contaminants out. We sailed for months in the tropics without refrigeration and used mayo and other products with no problem at all. Did miss cold beer though!!
